Or, if you were accosted in a dark alley somewhere and you happened to be carrying a tomato sandwich, you could throw it in your attacker's face and run away, and BAM! It would have saved your life. Although it would be really sad to let a good tomato sandwich go to waste like that.
I'm starting to sound crazy or stupid or both, but the point is that tomato sandwiches are delicious, and, because I grew up eating them with my grandmother and my mother every summer, I associate them with the comfort and simplicity that are the hallmarks of any good summer lunch.
Tomato Sandwiches
- 1 tomato, sliced thin across
- 2 slices of bread (this is one time where I would actually choose white bread)
- Mayonnaise to taste (this is one of the few times where I would actually add mayo)
- Salt and pepper to taste
1. Go out to your backyard and pick some fresh tomatoes. If you don't have fresh tomatoes, go buy some really good ones (they should smell like tomatoes, not like styrofoam), because tomatoes are the star of this sandwich.
2. Toast your bread and spread mayonnaise, to taste, on both pieces. Then arrange your tomato slices as you wish and sprinkle salt and pepper, to taste, over the slices.
3. Eat your sandwich.
I know that tomato sandwiches seem a little simple and even, god forbid, icky to some of you out there, but all I can say is that, in the middle of summer, when the tomatoes are finally, naturally in season, there is no better treat than a simple tomato sandwich for lunch.
